Summer is awesome…. Mostly because of all the delicious, seasonal, fresh fruit! Best way to peel a mango- use a small vegetable peeler!

My “baja ensalada”

I was at Baja Fresh recently with some friends and I remarked how much I love the Baja Ensalada they serve.  However, for the $7 they charge for one salad, I am pretty sure I can make it at home for two people.  I gave it shot, and even though I didn’t have the exact ingredients, it had the crunch and flavor I was craving.

The salad has thinly sliced organic red leaf lettuce, garbanzo beans, avocado and tomato slices, grilled shrimp, red onion, corn, and chopped cilantro.  Instead of tortilla strips, I crunched some blue corn chips on top (after tossing the salad in a nice light dressing).  I squeezed fresh lime juice over before serving.  Tangy, crunchy, healthy, and satisfying.  And it made 4 BIG bowlfuls!
