My "baja ensalada"
I was at Baja Fresh recently with some friends and I remarked how much I love the Baja Ensalada they serve. However, for the $7 they charge for one salad, I am pretty sure I can make it at home for two people. Since we switched over to eating brown rice I was a little unsure how the stir fry would turn out. Basically a well-seasoned wok is the essential ingredient. Keep a nice even medium-heat on the wok. I had been craving a perfectly cooked plate of spaghetti for a few weeks. I picked up some organic spaghetti at Trader Joe’s, and decided to make the sauce from scratch. I gathered up the ingredients and popped them all into a blender (a food processor works great) and pulsed for about 20 seconds.
